The temperature is dropping, mornings are gloomy, and most days a cup of coffee is my motivation to get up. But come sunday, sleeping in is my best friend. When you finally roll out of bed around 10, breakfast is out of the picture… but brunch is perfect. Call your friends and tell them to bundle up and get over to your place by 11:30 for pancakes, roasted root veggies, and a warm cup of spiced apple cider.
The first step to making killer food is being sure that the ingredients were grown with love and care rather that pesticides and poor working conditions. Head over to your local farmer’s market on Saturday and snag the freshest beets, carrots, potatoes, apples, any other fruit that’s in season, and flour if they sell it there. Then grab the others from a health food store or other grocery store: coconut oil, maple syrup, baking powder, oats, alternative mylk and applesauce.
Next create just the right vibe (you can get as fancy as you want with this part) by adding flowers or little sprigs of pine to the table, personalized notes for the guests, mason jars wrapped in twine & ribbon for drinking glasses. Or you can keep in casual, just a morning catching up with your babes.
Now for the cooking!
London Fog Pancakes
4 tbsp of boiling water steeped with 3 earl grey teabags
- 3 stems lavender
- 1 cup soymilk
- 2 tbsp melted coconut oil +a bit more for the pan
- ½ cup apple sauce
- 2 tsp vanilla extract
- 1 cup flour
- ½ cup oats
- 1 tbsp baking powder
- 1 tsp cinnamon
- mix all dry ingredients in a bowl
- mix all wet ingredients in another bowl
- combine and mix (be careful not to over mix)
- heat up a pan and cook like normal pancakes!
Coconut whipped cream
- coconut cream
- maple syrup
- whip everything together until light & fluffy
Olive Oil & Rosemary Roasted Vegetables
- 2 potatoes
- 1 sweet potato
- 2 beets
- 4 multi colored carrots
- 3 tbsp olive oil
- 2 sprigs rosemary
- preheat oven to 400 degrees fahrenheit
- cut up all the veggies
- toss in olive oil & rosemary
- lay out on baking sheet
- put in the oven for 15 minutes
Spiced Apple Cider
- 7 apples or 3 cups apple juice
- cinnamon sticks
- juice all the apples
- pour into a sauce pan
- add all the spices and cranberries
- cook on low heat for 20 minutes
